Carrot Cake Sandwich Bread

Don’t balk at the idea of putting the classic flavors of carrot cake into bread. It takes a ham sandwich from boring to bodacious, especially if you add a schmear of cream cheese.

 

 Makes one large loaf.

 

In a large bowl, whisk together and let sit 5 minutes . . . . . . . . . . . . . . .

 

Add and stir together well to make a stiff shaggy dough, knead lightly in the bowl, then cover loosely and let rise until doubled  . . . . . . . . . . . . . . .

 

 

 

 

 

 

 

 

 

¾ c. +/- warm water

¼ c.  honey

1 T. yeast

 

¼ c. vegetable oil

3 c. flour

1 c. shredded carrots

½ c. raisins

½ c. chopped pecans

2 t. salt

2 t. cinnamon

 

 

Turn out onto a well-floured surface, roll into an 8-inch wide rectangle, roll up into a log, and put in a greased loaf pan. Cover and let rise again until doubled. Bake at 350° until brown on top and bottom. Cool completely before slicing.
